Baked Chocolate Coffee Donuts with Chocolate Coffee Glaze Recipe

A Perfectly Delicious Recipe

Adding coffee to chocolate desserts can bring out the chocolate flavor and make them even more satisfying. This recipe uses strong brewed Alex’s Low-Acid Organic Coffee, which tastes smooth and fabulous. Choose Decaf if you’re serving these donuts later in the day, or stick with Regular or Half Caff if you’re serving these donuts for an energizing breakfast. 

A Great Start to the Day

These donuts are a great way to start the day, especially with a cup of Alex’s Low-Acid Organic Coffee to accompany them. Low-acid coffee is gentler on the stomach than regular coffee, and it’s also sweeter and less bitter. 

The recipe is easy to make. Just mix up the batter, pipe it into donut molds with cooking spray and cocoa powder, and bake the donuts. Glaze them with a simple glaze and add peanuts if desired. You don’t have to worry about deep frying or using yeast. If you don’t have a donut mold pan, you can use a baking sheet and just pipe the batter in circles. You can use a pastry bag or make a piping bag as described in the recipe.

You can make the glaze ahead of time if you like. The peanuts are optional, but can be satisfying and beautiful on top of these dark donuts. They also pair nicely with fruit. You can even slice bananas and place them on top of the glaze when the donuts are warm.

Recipe for Baked Chocolate Coffee Donuts with Chocolate Coffee Glaze

Make 12 donuts

Ingredients:

For Donuts

  • 1 cup of flour
  • ½ cup of unsweetened cocoa powder (baking cocoa), plus 2 tablespoons.
  • 2 teaspoons of baking powder
  • ½ cup of brown sugar, packed
  • ½ cup of white sugar
  • ½ cup of buttermilk, plus ¼ cup
  • ½ cup of strong brewed Alex’s Low-Acid Organic Coffee
  • 2 eggs, lightly beaten
  • 2 tablespoons of butter
  • 1 teaspoon of vanilla extract
  • ½ cup of mini or regular semi-sweet chocolate chips

For Glaze

Directions: 

  1. Preheat the oven to 400 degrees. Spray a 12-donut pan and dust it with cocoa powder. Set the pan aside.
  2. In a large bowl, mix together the flour, ½ cup of cocoa powder, and baking powder.
  3. In a medium bowl, mix together the sugars, buttermilk, coffee, eggs, butter, and vanilla. 
  4. Gradually add the milk mixture to the flour mixture and fold together. Mix until blended. Stir in the chocolate chips.
  5. Add the batter to a resealable plastic bag, seal the bag, and cut an opposite corner to create a pastry piping bag. Squeeze the batter into each compartment of the donut pan until it is ⅔ full.
  6. Bake for 9 minutes or until they spring back when pressed. Turn onto a cooling rack. 
  7. Make the glaze by beating together the powdered sugar, cocoa, and coffee. Adjust the consistency as needed by adding sugar to thicken or coffee to thin. 
  8. When you can handle the donuts, dip them one by one into the glaze. If you are using peanuts, sprinkle them on top. Let the donuts set for at least 30 minutes before serving.
