    Recipe for Glazed Coffee Coffee Bundt Cake with Streusel

    Coffee cake is named for the coffee that you serve it with, and it doesn’t usually have coffee in it. It can be disappointing when you learn that fact if you love the taste of coffee. If that’s the case for you, you may love this recipe. It has coffee in the cake and in the glaze, and you can even add it to the streusel filling! Alex’s Low-Acid Organic Coffee can add flavors of chocolate, nuts, and caramel to each component of the cake. 

    An Elegant Cake for Family or Company

    This cake is beautiful. It comes out in a lovely round bundt shape, and you can see the appetizing glaze on top. Once you slice it, you can see the streusel filling with a dark tone due to the coffee. 

    This cake has coffee in three places:

    • In the cake
    • In the glaze
    • In the streusel

    How to Serve Your Coffee Coffee Cake

    Coffee cake is designed to be served with coffee. You can have it for breakfast with your usual cup (or two) of coffee on a regular weekday or leisurely weekend. Or, have it for brunch with your family or when you have company. 

    You can also serve the cake with a little something else, whether for breakfast or dessert. These are a few nice accompaniments.

    • Fruit, such as strawberries, sliced banana, or peach slices
    • With ricotta or cream cheese
    • With peanut or almond butter
    • With ice cream or chocolate sauce

    And now, here’s the recipe.

    Recipe for Glazed Coffee Coffee Bundt Cake with Streusel

    Makes 1 10-inch bundt cake 

    Ingredients

    Streusel

    • ½ cup of pecans, finely chopped
    • ¼ cup of flour
    • ⅔ cup of sugar
    • 1 ½ teaspoons of cinnamon
    • Optional: coffee grinds

    Cake

    • 3 ¼ cups of flour
    • 1 ½ teaspoons of salt
    • 2 ½ teaspoons of baking powder
    • 1 teaspoon of baking soda
    • 1 cup of sour cream
    • ¾ cup of strong brewed Alex’s Low-Acid Organic Coffee Rise and Shine, cold
    • 2 teaspoons of vanilla
    • ½ cup of butter
    • 3 eggs

    Glaze

    Instructions

    1. Make the streusel by mixing the chopped nuts, sugar, flour, and cinnamon in a small bowl. Set aside.
    2. Preheat the oven to 350 degrees and spray a bundt pan and dust it with flour.
    3. In a medium bowl, combine the dry ingredients.
    4. In a separate bowl, beat the butter and sugar together until light and fluffy. Beat in one egg at a time, continuing to mix on low. Beat in the vanilla and coffee.
    5. Add your ingredients to a large bowl, alternating the dry and wet ingredients. 
    6. Pour half of the batter into the pan. Distribute the streusel evenly. Add the rest of the cake batter.
    7. Bake for 50 to 60 minutes until the cake tests done with a toothpick. 
    8. While the cake is baking, make the glaze by mixing together the ingredients. 
    9. Remove it from the oven and let it cool before removing the cake from the pan. Use a knife around the sides of the pan if needed to get it out cleanly.
    10. Drizzle the glaze over the cake.
    11. Serve and enjoy!
