More than 30 percent of coffee drinkers experience heartburn, acid reflux, or stomach discomfort. Many believe the issue comes from pH level, but that is not the full story. Coffee naturally contains many acids that contribute to its flavor and aroma. The real cause of upper GI distress is a compound called Chlorogenic Acid, especially CQA 3, 4, and 5. These compounds can occur naturally and increase significantly during drum roasting.

Almost every coffee roaster uses a drum roaster, where beans touch hot metal. We created a better way. Our patented convection roasting system uses a bed of hot air, so the beans never come into contact with steel. This method allows for an even roast and significantly reduces Chlorogenic Acid levels. The result is a smooth, flavorful, and easy-to-drink coffee that is gentle on your stomach.

If you are skeptical, that is fair. There is a lot of confusing information about coffee and acidity. Our process is supported by research from Dr. Taka Shibamoto, Distinguished Professor of Environmental Toxicology and Director of the UC Davis Coffee Center. His studies show that high levels of Chlorogenic Acid lead to bitterness and stomach irritation in coffee.

  • 50% Chiapas — grown in southern Mexico near the Guatemalan border. These beans share the same volcanic soil and high altitude qualities as Guatemalan coffees. They are mild and delicate, with sweet notes of brown sugar and pear, and a nutty finish.
  • 25% Nicaragua — balanced and smooth, with subtle complexity and flavors of chocolate, nuts, vanilla, and a light touch of lemon.
  • 25% Honduras — mild, rounded, and universally appealing, with notes of chocolate, vanilla, and hazelnut.
